Meanwhile, halve and core the tomatoes and cut into cubes. Finely chop the onion, also cut the avocado into small cubes, and mix everything together in a bowl. Chop the coriander leaves and add them with the lemon juice and oil, season everything with herb salt, pepper and cayenne pepper.
Use the peeler to slice the cheese into fine shavings.
To serve, place the pasta on serving plates, cover with the avocado and tomato sauce and sprinkle some cheese shavings on top. Garnish with coriander leaves.
