Cook the pasta until al dente and drain, clean the leek, cut into rings, quarter the tomatoes, whisk together cheese, chopped herbs and eggs, season with salt and pepper. Heat the fat in the pan, fry the pasta vigorously, then sauté the leek, add the tomatoes and pour the egg mixture over them. Cover and let set over a mild heat.
If you miss the meat, you can add small Kabanossi sausages here. Danger! Use a large pan !!!
