Cook pasta al dente. Bring the water with the butter, a little salt and sugar to the boil. Add the broccoli and cook for 6-8 minutes. Allow to drain, collecting the liquid. Mix the broccoli with the noodles and keep warm.
Mix 125 ml broccoli liquid with the crème fraiche. Bring to a boil. Quickly stir in the egg yolks, but don`t let them boil anymore. Season the sauce with pepper and nutmeg. Pour over the broccoli noodles. Cut the ham into small pieces and spread over the dish.
