Instructions

  1. Cook the noodles in plenty of boiling salted water until they are firm to the bite. Just before the end of the cooking time, add the peas and cook at the same time. Then pour off and collect 100 ml of the cooking water.
  2. Rinse the pasta and peas ice cold and drain. Rinse the basil and parsley, shake dry and pluck the leaves from the stems, setting aside some basil leaves for garnish. Puree both with crème fraîche and milk. Season with a little salt, pepper, a pinch of sugar and lemon juice.
  3. Cut the ham into strips. Mix all prepared ingredients in a bowl with the dressing and let steep for 10 minutes. Cut the basil leaves that were set aside into small pieces and sprinkle the pasta salad with them and the grated Grana Padano.
