Instructions

  1. Cook the pasta in salted water until al dente.
  2. Clean the leek, cut in half, quarter and cut into strips. Peel and roughly grate the carrots. Peel and core the mango and cut into small pieces.
  3. For the sauce, stir well the yogurt, mango chutney, soy sauce and the spices.
  4. Mix the drained, cooled noodles in a bowl with the leeks, shredded carrots, mango pieces and drained corn kernels, then mix with the sauce.
  5. Season to taste with salt.
