- Cook the pasta in salted water until al dente.
- Clean the leek, cut in half, quarter and cut into strips. Peel and roughly grate the carrots. Peel and core the mango and cut into small pieces.
- For the sauce, stir well the yogurt, mango chutney, soy sauce and the spices.
- Mix the drained, cooled noodles in a bowl with the leeks, shredded carrots, mango pieces and drained corn kernels, then mix with the sauce.
- Season to taste with salt.
