Cook the pasta according to the instructions on the packet and rinse in cold water. In the meantime, make a dressing from spring onions, garlic, basil and olive oil and season with salt, pepper, balsamic vinegar and honey. Fold in tomatoes, mozzarella and tortellini and let steep for at least an hour. Season again to taste and serve. A pleasure for grilling or as a summer main course with baguette. I usually take a little more balsamic vinegar and since I have a particularly good and sweet one, I usually leave out the honey.
