Cook the pasta firm to the bite and set aside to cool.
Cut the bacon into strips and fry until crispy. Dice the sheep`s cheese, cut the spring onions and tomatoes into small pieces.
In a large bowl, stir together the olive oil, vinegar and the pesto. If you like, you use a little less olive oil, but instead use the oil from the pickled tomatoes and / or omitted fat from the bacon. That makes the salad even more aromatic. Add the sheep cheese, spring onion, tomatoes and bacon. Finally add the lukewarm pasta. Mix everything, season with salt, pepper and paprika and let steep for 2-3 hours.
Before serving, fold in the washed and, if necessary, cut rocket and season again.
