Cut the tomatoes into small cubes, cut the spring onions into rings. Finely chop the parsley and garlic. Put the ingredients in a large bowl, season well with salt and pepper and pour over the vinegar and oil. If you have the time, it is best to let it go for a few hours.
In the meantime, cook the noodles in plenty of salted water until they are firm to the bite. Mix the pasta with the tomato mixture and maybe season again. The pasta can also be placed hot in the tomatoes.
Tastes lukewarm just as good. Is delicious for grilling in summer.
