Cook the pasta according to the instructions on the packet.
Cut the tomatoes and core them if necessary (if you don`t like it so watery). Wash the rocket and cut off the tips if necessary.
Drain the mozzarella and cut into small pieces.
Peel the avocado and cut into small pieces. Drizzle with lemon juice so that it doesn`t turn brown. Wash the cucumber and cut into small pieces.
Make a dressing from orange juice (if you like it more sour, add vinegar), oil, mustard, frozen herbs, salt and pepper (if you prefer, add a small cup of natural yoghurt). Instead of the orange dressing, pesto is also delicious as a dressing substitute.
Mix the pasta, tomatoes, cucumber, mozzarella, avocado and rocket and mix in the dressing.
Wash the zucchini and cut into small pieces, then fry in a little oil. Roast pine nuts over low heat. Spread the warm zucchini and pine nuts over the salad and sprinkle with grated Parmesan. Then top the salad with fried chicken breast.
Tip:
If you like, you can also fry mushrooms and pieces of bread and spread them over the salad.
