  1. Cook the pasta in salted water until al dente. Wash, dry and chop the rocket salad. Drain the tomatoes and cut into pieces. Peel the garlic and press it through a press.
  2. Puree the rocket, tomatoes, garlic, tomato oil and olive oil. Mix in the parmesan. Season to taste with salt and pepper.
  3. Drain the pasta, drain and transfer to a preheated bowl. Mix with the pesto and serve garnished with rocket.
