Pasta with Parma Ham in Lemon Oil
Instructions
- Peel and finely chop the garlic, grate the parmesan, wash the lemon and rub the peel, then squeeze the lemon, wash and chop the parsley.
- Cook the pasta in boiling salted water.
- Tear the ham into pieces and fry them in a pan (without fat) until crispy, remove the ham and drain on a kitchen towel.
- Heat 5 tablespoons of olive oil in the pan, sauté the lemon zest and garlic, add the lemon juice and bring to the boil, season with pepper, chilli and a pinch of sugar, add 5 tablespoons of the pasta water.
- Drain the pasta and add to the pan with the lemon oil, mix in the parsley.
- Serve with the Parma ham and Parmesan.
