Peel and finely chop the garlic, grate the parmesan, wash the lemon and rub the peel, then squeeze the lemon, wash and chop the parsley.
Cook the pasta in boiling salted water.
Tear the ham into pieces and fry them in a pan (without fat) until crispy, remove the ham and drain on a kitchen towel.
Heat 5 tablespoons of olive oil in the pan, sauté the lemon zest and garlic, add the lemon juice and bring to the boil, season with pepper, chilli and a pinch of sugar, add 5 tablespoons of the pasta water.
Drain the pasta and add to the pan with the lemon oil, mix in the parsley.
