Cut the bacon into strips and the onions into half rings. Squeeze out the sauerkraut very well. Cook the noodles in plenty of boiling salted water until they are firm to the bite.
In the meantime, fry the bacon with 2 tablespoons of olive oil in a pan, add the onion and fry for 2 minutes. Take everything out of the pan and set aside.
Put 2 tablespoons of olive oil in the pan and fry the sauerkraut. Mix in butter and sugar and roast light brown over medium heat. Pour in the broth and cream and bring to the boil. Add the onion and bacon mixture.
Season with salt, pepper and caraway seeds and mix in the finely chopped parsley leaves. Drain, drain and mix in the pasta.
