Instructions

  1. First cook the pasta according to the package instructions.
  2. Meanwhile, cut the bacon and onions into small cubes (the latter particularly fine). The best thing to do is to fry this in plenty of butter. Use a relatively large pan if possible.
  3. Collect the bacon and onions together with the butter in a small bowl.
  4. Process the butter and flour in the above-mentioned pan with a whisk to make a roux and deglaze with plenty of broth until it has become a creamy, but not too thick sauce.
  5. Now put the bacon, onions and butter back in here. Stir in enough tomato paste until the sauce turns a light red color.
  6. Taste the sauce with a dash of Maggi and a dash of lemon juice.
  7. If the sauce has become a little too thick again after adding the tomato paste, you can dilute it a little with vegetable stock. The sauce tastes wonderful even the next day. If it has thickened a little too much, just add a little broth and it will be nice and creamy again.
  8. If you like, you can also serve coarse sausages.
  9. To prepare the sauce, you don`t need quite the time you need to cut the bacon and onions to cook the pasta according to the manufacturer`s instructions.
