Cook the noodles in enough salted water until they are al dente.
Wash the zucchini and peppers and cut into cubes. Put in a pan and sauté with water. There should always be enough water in the pan so that the vegetables don`t burn, if necessary, add more.
Press the garlic through a press and cook with it.
When the vegetables are cooked, add the vegetable stock and puree. Bring to the boil again.
Remove the pan from the stove and stir in the sour cream. Season with salt and pepper.
