Instructions

  1. Peel the onion and the clove of garlic and cut into fine cubes. Heat the butter in a saucepan and sweat the onion and garlic in it until translucent. Deglaze with white wine (or white port wine) and poultry stock. Add the cream and milk while stirring and let the soup reduce a little over medium heat.
  2. Wash the lime with hot water, dry it well and grate the peel finely. Squeeze out the juice.
  3. Put the arctic prawns on wooden skewers and fry them briefly on both sides in olive oil. Add the lime zest and juice, season with salt, pepper and sugar and remove from the heat. If necessary, finely chop fresh herbs and sprinkle them on the prawns.
  4. Add the peas to the soup and cook briefly. Puree the soup with the magic wand and pass through a fine sieve. Cut the butter into cubes and mix into the soup.
  5. Serve with the prawns. You can also put the prawns in the soup without wooden skewers.
