Melt the chocolate in a water bath and whip the cream until stiff. Mix melted chocolate with vanilla pudding and carefully fold in cream. Mix 3 tablespoon espresso, 7 tablespoon water and 2 tablespoon rum.
Divide the peaches in 4 dessert glasses, cut the ladyfingers in half and soak them in the espresso mixture. Serve over the peaches. Spread the cream on top and garnish with amarettini.
