Cut the peaches in half and remove the stone. Using a teaspoon, carefully remove some of the pulp to make a nice round opening and set it aside.
Drizzle the peach halves with a little lemon juice.
Finely crumble the amaretti and finely chop the almonds. In a bowl, mix the almonds, amaretti, 20g sugar, cocoa, egg yolks and peach meat well.
Pour the mixture into the peach halves.
Preheat the oven to 200 °.
Brush a baking dish with butter and put the peach halves in with the filling facing up. Sprinkle with the remaining sugar and drizzle the wine, port or sherry over it.
Put in the oven and cook for 35 minutes. From time to time sprinkle with the escaping liquid.
