Instructions

  1. Cut each peach into 6 wedges and wrap them in the Parma ham. Arrange on plates with the rocket.
  2. Reduce the balsamic vinegar and sugar in a non-stick pan at high temperature until syrupy. Let cool a little and then drizzle over the salad. Season with pepper.
