Squeeze out the tofu and cut into small cubes. Dice the vegetables. Finely chop the onion and garlic.
Heat coconut oil in a large pan. Sear the tofu over high heat. Turn the heat down a little and add the onion, garlic, paprika and mushrooms, fry briefly and deglaze with the vegetable stock and oat milk. Simmer over a low heat for about 10 minutes. Then add the peanut cream and soy sauce and season with the spices to taste.
Basmati rice goes well with it. We also like to have French fries with it every now and then
