Peel and core the pears and apples, then cut into wedges that are not too thick. Melt the butter in a pan and sauté the pears and apples over medium heat. Add the honey and let everything caramelize slightly. Season with the spices, salt and pepper according to taste. When everything is cooked to a golden brown compote and the fruits still have a bit of a bite (after approx. 10 minutes), remove the pan from the heat and refine it with calvados, pear brandy or something similar. Arrange everything hot on plates and sprinkle with crumbled Gorgonzola.
