Bring the pears, shallots, lemon juice, white wine, water and sugar to the boil. Simmer for 15 minutes, stirring frequently. Add the soft bacon pears, prunes, nuts and preserving sugar, simmer for another 3-4 minutes. Mix in the mustard and pepper.
Pour boiling hot into the clean, preheated glasses, close immediately and turn upside down for a moment. Store in a cool and dark area.
Tastes delicious with fresh bread, cheese and white wine.
