Peel and core the pears and cut into cubes or slices. Peel and dice the onion. Leave out the bacon, brown the onion with it. In the meantime, dice the cheese and make a vinaigrette made from oil, vinegar and herbs.
Mix the ingredients (except for the croutons), add a little pepper if necessary and let it steep for about 1 hour. Arrange and sprinkle with croutons.
Since the cheese and bacon are usually very hearty, the salad usually no longer needs salt. For this reason, the amount of pears should clearly make up the largest part.
I have served this salad several times and with all test subjects the frown quickly turns into a Hmmmmmm! gave way!
