Pecorino Parfait with Walnut Brittle and Port Wine Pear
Instructions
- Preparation of parfait:
- Whip the first 5 ingredients in a water bath and peel to rose, whip cold on ice water.
- Pour half of the mixture into the mold and freeze in the freezer, chill the other half.
- Brittle:
- Roast the nuts dry, add sugar and caramelize, spread on baking paper and let cool.
- Chop the brittle and pour onto the frozen parfait. Add the rest of the mixture and let it freeze.
- Pears:
- Caramelize sugar, deglaze with port wine, add pears and steam, let cool.
