Cook the penne in plenty of salted water according to the instructions on the packet, rinse with cold water and allow to drain.
Core the cucumber and cut into small cubes with the sheep`s cheese and bell peppers. Chop the clove of garlic and parsley, save some parsley leaves for the garnish.
Mix the yogurt dressing with the yogurt and season with cumin, lemon juice, salt and pepper.
Mix the penne with cucumber, sheep cheese and pepper cubes, olives, chopped garlic clove and parsley and stir in the dressing. Serve garnished with parsley leaves.
