Instructions

  1. Finely grate the lemon peel. Cut the salmon fillet into cubes. Clean the zucchini and cut into cubes. Chop the shallot and sauté with a little olive oil in a pan. Add the zucchini cubes and wet with 3 tablespoons of water.
  2. At the end of the cooking time, when the water has evaporated, add the salmon cubes and fry briefly. Salt and pepper to taste, add a few squirts of lemon juice to taste.
  3. Meanwhile, cook the penne in plenty of salted water until al dente, drain and mix with the sauce in the pan. Add the grated lemon zest and the finely chopped chives and serve.
