First cut the zucchini into approx. 1/2 cm thick slices and then quarter these slices. Fry the zucchini in the olive oil in a saucepan. After about 5 minutes, add the chopped tomatoes and season the sauce with salt, pepper and oregano as desired. Cut the dried chillies (amount to taste) into small pieces and add. Let simmer for about 10 minutes.
During this time, cut the sheep`s cheese into cubes and add to the sauce. Let the sauce simmer for another 15 minutes. Stir again and again. The sheep cheese should be melted at the end.
Prepare the penne (or rigatoni) in salted water according to the instructions on the packet. Pour the sauce over the pasta, mix well and serve.
