Cut the parsley into small pieces. Cut the garlic into small pieces. Put the minced meat in a bowl. Add the well-squeezed roll, egg, garlic, pine nuts, mustard, parsley, salt and pepper and mix together. Season again to taste.
Divide into four portions and shape them with damp hands. Fry slowly on both sides in a pan with clarified butter.

This is Carsten`s “perfect meatball” - of course you can vary the meatballs to your taste with onions and bacon, other spices and herbs as well as breadcrumbs or oat flakes instead of the soaked bun and create your own “perfect meatball”!
