Instructions

  1. Whip the cream until stiff.
  2. Heat a saucepan with a water bath. Beat the eggs and beat them in a water bath with the mixer until they are white and frothy. Sprinkle in the sugar and beat until the sugar has dissolved and the mixture is creamy and shiny. This takes about 5 minutes in total. Then remove the water bath from the saucepan and let the mixture cool down to room temperature while continuing to beat.
  3. Beat the vanilla essence well with the milk. Add the cream and milk to the egg and sugar mixture and fold in well with a spatula.
  4. Pour the mixture into the ice cream machine and prepare it for about 40 minutes, depending on the manufacturer`s instructions.
  5. The ice cream can now be enriched e.g. with crumbled oreo biscuits or M & M`s or chopped chocolate chips. Fresh fruit such as blueberries, raspberries, etc. can also be added.
  6. Add these additions to the ice cream machine and let it run for another 2-3 minutes until everything is well mixed. The ice cream can then be frozen very well and served later.
