Wash the herring fillets and remove some of the oil. Peel the apple into small pieces or slices. Cut the onion into thin rings.
Put all of this in a bowl and layer them. Then add the juniper berries and the bay leaf, fill up with cream until everything is covered. Then pour a thick layer of black pepper over the cream and a dash of vinegar. Put the lid on and place in the refrigerator for 24-48 hours.
Serve with jacket potatoes.
Tip:
You can soak the herrings in mineral water for one to two hours, then the taste of the oil is gone.
