We prepare the fish. First you need to cut off the head (if this is not done, the herring will be salted for a very long time). We do not take out the insides so that the milk or caviar is also salted. We take either a spoon, or a fork, or a thin knife, put it into the fish and walk along the ridge to clean off the film and blood. We wash the fish outside and inside with cold water, cut off the tail and dry it with napkins.
Place the herring in a bowl and fill it with cooled marinade. We cover with a lid and send to the refrigerator for 2 days. (If you like well-salted fish, leave it on longer.)
Separate the fillet from the bones before serving. To do this, we cut along the ridge, put the thumb inside the cut, and the index finger into the abdomen. Then we press on the ridge and take it out. We remove the insides and peel off the films.
