Instructions

  1. Put the flour in a bowl. Put the yeast, water and sugar in a glass, dissolve the yeast in the water and add to the flour. Add the oil and salt and slowly knead the milk and work it into a dough. When the dough is done, it must be very soft and still stick to the hand. Cover the dough and let it double in a warm place.
  2. For the topping, put the mince in a bowl. Peel the onions and garlic, cut into eighths and chop them up in a food processor (do not make a pulp) and add to the mince. Wash the peppers, cut off the head, core and also add to the mince. Wash the parsley, pluck the leaves and add to the mince. Add the tomatoes, paprika pulp, salt, pepper and paprika powder and mix well. Season to taste and possibly add chilli flakes. The mince mixture must be mushy.
  3. Whisk the eggs together. Preheat the oven to 180 degrees top / bottom heat. Prepare 2 baking sheets with parchment paper.
  4. When the dough has risen, flour the work surface and shape the dough into balls the size of a lemon. Roll out the dough balls oval with a rolling pin, distribute a heaped tablespoon full of the mince mixture on the dough, avoiding the edges. Fold about 1.5 cm of the edge so that the boat is created. Place the boats on a baking sheet lined with baking paper and brush the edges of the dough with the beaten egg. There should be 4 boats each on a baking sheet. Bake in the preheated oven until golden brown. When the next baking sheet is ready, they are baked in the oven (approx. 20 minutes).
  5. The surface can be varied. In Turkish restaurants you can find pide next to mince with Turkish cheese, with sucuk, with cheese and Turkish beef ham etc.
