The snail pie made from lavash, which is quite simple to prepare, turns out to be very satisfying, tasty, and elegant. We twist pita rolls with two fillings – with minced chicken and with mushrooms, tomatoes, and herbs, put in a mold, and fill with cheese-sour cream mixture. After baking in the oven, we get a fragrant and appetizing dish.
Wipe the mushrooms with a damp kitchen towel, freshen the cut on the stem. Cut the mushrooms into slices.
Put the mushrooms in a frying pan preheated with vegetable oil and fry until the liquid evaporates, 5-7 minutes. Season with salt, add coriander and black pepper. Cool down. Peel and chop the onion in a blender or chop finely.
Minced meat (you can take any, I have homemade, from chicken breasts) put into a bowl, add chopped onion, salt, and freshly ground black pepper. Mix well, divide into 2 parts.
Wash and dry the tomatoes and herbs (I used green onions, dill, and parsley). Finely chop the tomatoes, chop the herbs.
Combine tomatoes, fried mushrooms, and herbs. Salt and pepper lightly. Preheat oven to 180 degrees.
You will need 4 rectangular pieces of pita bread measuring 35 by 25 cm. Put half of the minced chicken on the edge of the pita bread.
Roll the pita bread into a tight roll. Proceed in the same way with the second lavash and the remaining minced meat.
Put half of the mushroom filling on the edge of the pita bread and roll into a tight roll. Do the same with the second part of the mushroom filling and the remaining pita bread.
Arrange the rolls in a baking dish in a circle from the edges to the center of the dish, alternating between different fillings. (I have a mold with a diameter of 28 cm.)
Grate cheese on a coarse grater. Mix sour cream and eggs, add salt and pepper. Add cheese, stir.
Pour lavash pie “Snail” with cheese and sour cream mixture. Cook it in the oven at 180 degrees for about 45 minutes, until golden brown.
Ready pie “Snail” from lavash, with minced meat, mushrooms, tomatoes, and cheese, cool slightly.
