Instructions

  1. Peel the pineapple and cut out the brown indentations. Remove the stalk, cut the pulp into pieces.
  2. Mix the flour with the milk until smooth, mix in the eggs, vanilla sugar and a pinch of salt.
  3. Heat 1 tablespoon of oil in a large pan, pour in the batter, sprinkle with pineapple pieces, bake briefly over a moderate heat, turn and bake again.
  4. Pick up the parsnips with two forks and push them to the side a little. Heat the butter on the open surface of the pan, sprinkle with sugar and let it caramelize. Mix the Schmarren with the caramel and serve sprinkled with powdered sugar.
