Mix the flour, cream, milk, sugar, cinnamon, rum, lemon zest and salt until smooth and then stir in the eggs. Finally, add the desiccated coconut and let the dough rest for 15 minutes.
Dip the pineapple slices in the batter, bake them in a pan in the hot oil until golden and then sear them.
Arrange as desired, e.g., with strawberries and vanilla ice cream.
