Instructions

  1. Put the flour in a bowl, add the oil and water. Then knead well until the dough can be pulled with your fingers. If the dough becomes cracked, you should add a little more water and just keep kneading, so it has to be kneaded for a long time. When the dough is nice and soft, sprinkle a kitchen towel and the rolling pin with flour so that nothing sticks. Preheat the oven to approx. 200 ° C (top / bottom heat).
  2. Put an egg in the cottage cheese and add a little salt (you can add Vegeta if you like), then stir.
  3. Tear off part of the dough and roll it out with the rolling pin. Then pull in all directions until it becomes very thin (there shouldn`t be any holes in the dough now). Now heat some oil in a pan. Put a little warm oil on the tray and distribute it. Do the same with the dough (be careful not to put too much oil on the dough, otherwise the pita will be too greasy). Then spread cheese on the dough as desired.
  4. When that`s done, roll up the dough (lift the kitchen towel a little on the side, then it comes off easily and can be rolled up easily). Put the roll on the baking sheet. Repeat the procedure until the tray is full.
  5. Bake the pita in the oven until it is golden brown, takes about 20 minutes.
  6. When the time comes, take the tray out of the oven and brush the pita with a little water. Then put it back in the oven for a few minutes so that it doesn`t get too dry.
  7. Variation:
  8. As a rule, in Croatia you can get pita that is filled with feta cheese and not with cottage cheese. The variant described here has the advantage that it is not quite as powerful and fatty, but still tastes extremely tasty. Of course, the most diverse variations are possible. For example, you can fill part of the rolls with cottage cheese and the other with feta. Mixing both types of cheese is definitely worth a try.
  9. This basic recipe can of course also be used for pita with meat filling. For this, minced meat is seasoned to taste (pepper, salt, rose paprika, Vegeta, garlic) and seared. Then let the meat cool down and stir in an egg. Then fill and roll the pita as described above.
