Instructions

  1. For the yeast dough, put the flour in a bowl. Make a well in the middle and crumble the yeast into it. Pour the water over it and sprinkle some sugar over it so that the yeast gets nourishment. Cover the yeast mixture with a little flour from the edge of the bowl. Then cover the bowl with a tea towel and let it rest for 10 minutes until the yeast has formed a small head of foam.
  2. Pour the remaining ingredients into a large bowl and knead with the yeast-water mixture to form a smooth yeast dough. Cover the dough and let it rise in a warm place for at least 30 minutes, until the volume has doubled, or preferably tripled.
  3. For the herb butter, chop the herbs in a blender or by hand. Add the softened butter, salt and pepper and mix thoroughly.
  4. Then roll out the yeast dough into a rectangle and spread thinly with the herb butter. The dough is cut into small rectangles, each approx. 4 cm x 8 cm. You can use a pizza roller or a knife for this.
  5. Roll up the first strip. Then roll the second strip around the first and do the same with the other strips. You can follow it in more detail in the video. In order to get a round shape of the bread when baking, I then put a 24 cm cake ring around the bread.
  6. The bread is baked at 200 ° C top / bottom heat for about 20 minutes. Immediately afterwards you can eat it lukewarm or cold.
