Instructions

  1. First, slightly warm the milk on the lowest setting. Put the butter and the yeast cube in here and wait while stirring gently until the butter and the yeast cube have dissolved. Do not let the milk get warmer than 20-25 degrees.
  2. Now put the flour, 75 g sugar and a pinch of salt in a sufficiently large bowl. Now that the milk has been mixed with butter and yeast, pour this over the flour and knead everything well until nothing sticks to your hands.
  3. Now let the ball of dough rise at 35 degrees in the preheated oven for approx. 20-25 minutes.
  4. Then roll out on the baking sheet and then cover with the plums. Now distribute another 75 g of sugar evenly over the plums (if you like, you can also add slices of almonds or the zest of an untreated lemon)
  5. Then let the dough rise again at 50 degrees on the middle rack and only then heat it to 175 degrees for another 25 minutes. It is best to check the dough with a toothpick after the time has elapsed - it is ready when no more dough sticks to the toothpick. Finally, distribute another 75 g of sugar over the plum cake.
  6. Serve with plenty of cream.
