Instructions

  1. Wash the plums, drain well or dry them, remove the stems, remove the stones and turn them through the meat grinder. Weigh the specified amount of fruit exactly and place in a saucepan (approx. 24 cm). Stir in the Gelfix evenly. Bring to a boil over high heat. Make sure that any remaining lumps are completely loosened by crushing them.
  2. As soon as everything is boiling through and through over a high heat with constant stirring, stir in the weighed sugar and bring everything back to the boil. When the jam is boiling through and through on a high heat, let it simmer for 1 minute while stirring constantly on a half-high flame.
  3. Remove the saucepan from the hob, stir the jam for another 5 minutes, skim if necessary and pour into the prepared twist-off glasses.
