- Halve the plums, remove the core - then quarter, cut into small pieces and transfer to a larger saucepan.
- Turn on the highest heat, add sugar, vanilla sugar and lemon juice and stir well.
- Boil the mixture, set the heat to the lowest level, put the lid on and simmer for 1 hour. Stir frequently in between.
- Add the cloves, cinnamon and bitter almond flavor 15 minutes before the boil, stir in well and put the lid back on.
- Take a jelly sample after 1 hour - then fill the plum jam into twist-off glasses and close immediately.
- The cellar is ideal for storage.
