  1. Halve the plums, remove the core - then quarter, cut into small pieces and transfer to a larger saucepan.
  2. Turn on the highest heat, add sugar, vanilla sugar and lemon juice and stir well.
  3. Boil the mixture, set the heat to the lowest level, put the lid on and simmer for 1 hour. Stir frequently in between.
  4. Add the cloves, cinnamon and bitter almond flavor 15 minutes before the boil, stir in well and put the lid back on.
  5. Take a jelly sample after 1 hour - then fill the plum jam into twist-off glasses and close immediately.
  6. The cellar is ideal for storage.
