- Wash and stone the plums. Pour into a large saucepan and mix with the preserving sugar and lemon or lime juice. Let it steep for a few hours.
- Now add the peeled and finely chopped ginger to the plum mixture and bring to the boil. Let it simmer for 4 minutes, then stir in the gin.
- Fill immediately into sterilized jam jars and close tightly.
