Sweat the dripping wet pointed cabbage in the butter in a large saucepan. Salt, pepper and pour on the cream, bring to the boil once. Now add the knife tip of baking soda, stir vigorously once, switch off the stove and put the lid on the kettle. After 5 minutes on the switched off stove, season with nutmeg, heat again briefly and, if necessary, thicken with starch.
