Put the plums, cinnamon and sugar in a saucepan and bring to the boil. Let the plums cook a little. Mix the vanilla pudding powder with a little water and thicken the compote with it.
For the cream, mix the marzipan, quark and sugar with a hand blender to a homogeneous mass. Beat the cream with the hand mixer. Mix the quark mixture and cream together. Add the poppy seeds and possibly the bitter almond flavor.
Layer the dessert in a glass. First plums, then cream, again plums, and finally cream again. If you like, sprinkle speculoos, amarettini or other biscuit crumbs on top.
