Instructions

  1. Wash and parry the meat. Preheat the oven to 100 degrees. Heat clarified butter in a pan and sear the meat on all sides. Cook the meat in the oven for 55 minutes. Then let it rest for 5 minutes and cut open. Season with salt and pepper.
  2. Wash the potatoes, boil them in salted water for 6 - 8 minutes, depending on their size, and cut them in half or, if necessary, quarter them. Peel the asparagus as needed. Wash the tomatoes. Wash the spring onions and cut into rings.
  3. Heat olive oil in a pan and fry the potatoes for 5 minutes. Add the asparagus, season with salt, pepper and chilli flakes and fry for 5 minutes. Add the cherry tomatoes and spring onions and cook for about 5 minutes. Garnish with Parmigiano Reggiano or Grana Padano.
