Instructions

  1. Finely chop the onion and dried plums. Season the pork loin with pepper, salt, paprika and garlic, then fry in the clarified butter (oil is also possible) on all sides, remove. Put some more fat in the pan and fry the onion in it. Add the chopped plums and fry over a low heat for about 5 minutes. Take the pan off the stove.
  2. Brush the pork loin all over with the onion and plum mixture (leave some of the mixture for the sauce). Wrap the loin in the bacon, place in an ovenproof dish and finish cooking in the oven at 150 ° C for about 20 minutes. Then let it rest for 5 minutes.
  3. For the sauce, put the pan with the rest of the onions / plums back on the stove. Deglaze with a dash of sparkling wine and let it boil down. Add the cream, bring to the boil and season again with salt and pepper. Serve with the fillet.
  4. This goes well with croquettes or mashed potatoes, for example.
