Instructions

  1. Clean and wash the spring onions and cut into fine rings. Wash, core, finely dice the apple and drizzle with lemon juice. Wash the pork loin, pat dry and cut across into medallions approx. 3 cm wide.
  2. Season the pork medallions with salt, fry in sunflower oil for 2 minutes on each side, remove from the pan and keep warm.
  3. Mash the peppercorns, fry briefly with the spring onions in the roasting set while stirring, dust with the flour and sauté briefly. Pour in the apple juice and bring to the boil. Stir in the cream and the apple cubes, season with salt to taste. Add the medallions including the meat juice and simmer for 1 - 2 minutes. Then arrange on plates and serve.
