Make a marinade from soy sauce, paprika powder, salt, pepper, savory and 3 finely chopped garlic cloves.
Peel 6 cloves of garlic and cut in half. Pierce the meat with a knife and insert half a clove of garlic into each one. Spread the garlic cloves all over the meat.
Brush the meat with the marinade and wrap in cling film. Put in the fridge overnight.
Sear the meat in hot clarified butter, deglaze with water and place in the oven at 180 degrees.
In the meantime, halve the apples, remove the core and cut into slices. Add the apples, juniper berries, cloves of garlic, honey, salt and pepper to the meat and cook covered for approx. 1 hour. After 1 hour, turn the meat, brush with apple mixture and continue to simmer covered for 1 hour. Then add the soy sauce and beer and stew for another 30 minutes.
