Cut the spring onions into rings and the meat into strips. Heat oil in a pan. Fry the meat in it for 5 minutes and season. Add spring onions and sauté. Cut the garlic clove into small pieces and sauté briefly.
Remove the ingredients from the pan. Heat the butter in the frying oil. Sweat the flour in it. Deglaze with the stock and cream, bring to the boil and simmer for about 5 minutes. Return the meat mixture to the pan and season.
