Instructions

  1. Cut the fillet into 12 equally thick slices and flatten with the heel of your hand. Heat 2 tablespoons of olive oil in a large pan and fry the pork tenderloin on both sides for about 4 minutes. Remove from the pan and season with salt and pepper. Preheat the oven to 200 °. Peel the onion and chop finely. Heat 1 tablespoon of olive oil and sauté the onions in it over low heat. Clean, dry and rub the champions, then cut them into slices. (You can also use canned champion discs). Add the crushed garlic.
  2. Steam the champions until there is almost no liquid left. Mix in the parsley and herbs with the champions. Season to taste with salt and pepper. Cut the mozzarella balls into 12 slices. Grease a baking dish and pour in the champions. Spread the pork medallions on top and top each with a slice of mozzarella. Season with pepper and drizzle with the remaining olive oil.
  3. (You can also put a tomato slice under the mozzarella slices) Gratinate in the oven for about 15 minutes until the cheese begins to melt.
