Boil the potatoes, let them cool down briefly and grate them roughly.

Then fry them in an oil and butter mixture. They are perfect if you sear them for 1 - 2 minutes on full energy and then fry them to about 2/3 (medium to higher energy) until they are nice and crispy.

For the dip, squeeze the garlic clove and stir all the ingredients.
For the salad dressing, squeeze half the orange and mix with the other ingredients.
